‘aperitivi’ as they are called in Italian-- are
such a ritual.

and what you do as what you drink. The word
‘aperitivi’ comes from the Italian word for open;
rough translation might be ‘openers’ and this is a
good description. They are the curtain going up on an
evening of social theatre.
The first decision is always, ‘Where are we going to
have aperitivi?’ At Lu Nibaru the star attraction is
the generous roof terrace from where you can look
out over the bay of Liscia di Vacca, and see the sun
dropping down over distant islands and mountains.
Here we prepare a simple drinks tray with mineral
waters, ice, lemons and a choice of the classic Italian
aperitivi: Campari, Cynar, Martini Rosso or Punt e Mes. With these will be a bowl of local olives and
some grissini or my favorite, foglia di musica.
For a different venue -- more people less nature --
another choice is to have ‘apperitivi in piazza’, the
village square in Porto Cervo....
