I love the texture the polenta gives these biscuits and the orange zest gives them a little extra kick.
They are also gluten free!
• pre heat the oven 180˚
• 150 gr fine polenta
• 130 gr ground almonds
• 50 gr caster sugar
• 100 gr unsalted butter at room temperature
• 2 organic eggs
• pinch of salt
• zest of an organic orange
• in your electric beater beat the butter and sugar until light and fluffy
• add the eggs, continue beating
• now add the rest of the ingredients
• beat until all is amalgamated
• roll little balls of dough between your palms
• place them on a tray, covered with grease proof paper
• push them down gently with the back of the fork
• bake for about 15 minutes
• they should be golden brown
• let them cool on a biscuit rack
• store in an airtight jar, they will keep a good week
• this recipe makes about 40 little biscuits
