AN INDIAN NIGHT AT TILBA

Our friends Andy and Judy came to stay in Tilba and as we had travelled together to Kerala in India together, we decided to have a nostalgic evening and made several Indian dishes.
We had so much fun cooking together.

• Andy made a delicious Dal using yellow split peas
• then added tomato past
• green and red chopped chillies
• garlic and Spanish onion also chopped
• fresh chopped parsley and coriander as decoration

• Judy picked some beans from the garden and sliced them
• roughly chopped some shallots
• mixed shredded coconut, red and green chillies, turmeric and cumin
• in a fry pan she gently fried the beans, shallots and fresh curry leaves

• she then pushed the beans out in a circle
• added the coconut mixture in the middle
• then mixed everything together, cooking it a little longer
• the beans still have to have a crunch to them

• I made a vegetable curry, raiding the ‘orto’ ( vegetable garden)
• I fried some mustard and nigella seeds, until the seeds popped
• then added some fresh curry leaves
• ground turmeric plus cumin and coriander seeds, crushed
• sliced a large Spanish onion and some garlic cloves and fried them in the spice mix

• now added the cauliflower, the diced melanzana and zucchini
• cooked until the vegetables start to soften and take colour

• now I added some coconut cream, salt and pepper
• cooked for another 10 minutes, stirring
• tasted for seasoning

• we also made a raita with cucumber, yogurt, chillies, shallots and nigella and cumin seeds

• I made a Chapaati using
• 250 gr wholemeal flour, 120 ml water, salt and cumin seeds
