At the Bermagui fish coop on the far South Coast of NSW,I found this beautiful fish called ‘Morwang’. I had never heard of it and never cooked it.
I decided to use the vegetables from my ‘orto’ and experiment.
It was a great success. The fish was sweet and firm and it let the taste of the vegetables come through.
I am sure you can use any firm fish – snapper, ling or blue eyed cod.
The great thing about this dish is, it is a one pot meal.
• pre heat oven 200˚
•for 6 people
• 6 medium filets of firm white fish
• 2 large Spanish onions, chopped
• 15 medium tomatoes halved
• 500 gr fresh, shelled peas
• 4-5 medium potatoes, par boiled
• fresh baslilico
• a big bunch of baby spinach
• butter a large oven dish, about 40 x 30 cm and 15 cm deep
• finely chop 2 large Spanish onions
• gently fry them in a little butter and oil for a few minutes
• arrange them on the bottom of the oven dish
• spread the halved tomatoes over the onion
• add some fresh basilico
• salt and pepper
• then the peas
• arrange the fish filets
• spread the spinach leaves over the fish
• slice the potatoes and arrange them evenly
• salt and pepper
• drizzle some good olive oil over the potatoes
• bake for about 20 minutes
• serve some crunchy sour dough bread with it
