At the market today I came across these beautiful, fresh sardines. They had already been filleted, so the hard work had already been done! I love sardines, they are so pact full of flavour and rich fish oils.
• turn the top heat on in you oven, turn it on high
• use an ovenproof dish
• sprinkle some good olive oil on he bottom of the dish
• chop a bunch of Italian parsley
• mix it with half a cup fresh bread crumbs
• 1 chili finely sliced
• salt and pepper
• cover the bottom of the dish with half the breadcrumb mixture
• start laying the sardines side by side
• continue until all the sardines are used up
• cover the sardines with the remaining bread crumb mixture
• sprinkle some more olive oil on top
• bake them in the oven until they start to take colour, about 4 minutes
• squeeze a little lemon juice over the sardines
• you can serve them as part of an antipasto or first course
