BANAN BREAD

I had these super ripe bananas, so decided to try and make a banana cake.
This one was so easy to assemble and the result was really delicious. I think the addition of the walnuts was genius. I love the crunch you get when biting into the soft, sweet cake. My food critics Leonardo and Clementine gave it the thumbs up!

• pre heat oven to 170˚
• 230 gr plane, unbleached flour
• 1 teaspoon baking powder
• 130 gr butter
• 200 gr coconut sugar, or brown sugar
• 2 organic eggs
• 2 big handful of activated walnuts
• 3 very ripe bananas
• 1/2 teaspoon salt

• beat the butter with the sugar until fluffy  ( 5 minutes)
• add the eggs
• then the bananas you have cut up roughly
• the flour salt and baking powder
• once everything is well mixed , fold in the walnuts
• line a loaf tin with baking paper

• pour the banana mixture into the mould and bake for 60 minutes

• let it cool, then slice the banana bread
