preheat the oven 180˚
make a short crust pastry:
• 300 gr unbleached flour
• 180 gr unsalted butter at room temperature
• 75 gr raw caster sugar
• 1 organic egg yolk
• 50 gr ground almonds
• a pinch of salt
• mix all the above ingredients with your mixer
• do not over work the pastry
• roll out the pastry, line a buttered 24 cm spring form with the pastry
• put in fridge for about 1/2 hour
• blind bake the pastry until golden
• let it cool on a wire rack
• beat 2 organic egg whites with
• 3 tablespoons of raw caster sugar
• a pinch of salt
• when they hold their peaks, fold in
• 200 g mascarpone
• 2 tablespoons of Marsala
• spread the mascarpone mixture on the cooled pie shell
• arrange the blue berries on top of the cream
