I think Persian cuisine lends itself so well to our way of eating, it is fragrant, healthy, varied and really quite easy to prepare.
Borani’s are side dishes. This one is made with fresh baby spinach and yogurt, the golden raisins are the surprise.
• 400 gr fresh, young, organic baby spinach
• 30 gr golden Iranian raisins, washed
• 1 Spanish onion, chopped
• a small piece of fresh turmeric, grated
• 1 kg plain Geek yogurt, strained throw a cheese cloth for 2 hours
• 3 tablespoons good olive oil
• salt and pepper to taste
• juice of half a lemon
• 80 gr toasted and chopped walnuts
• in a little olive oil and butter gently fry the onion and turmeric
• add the raisins
• mix in the spinach and let it just wilt
• remove from heat and leave cool
• add the yogurt
• 2 tablespoons of olive oil
• lemon juice and chopped walnuts
• salt and pepper to taste
• combine everything and serve
