I love this dish, my friend Valerie prepared it for me the other night. It is a wonderful ‘piatto Toscano’, so full of flavour. This is my version.
• soak some canellini beans over night
• pre heat oven 160˚
• put some very ripe, small tomatoes on an oven tray
• add 4-5 cloves of garlic
• 1 chilli, chopped
• basilico, salt and pepper
• drizzle some olive oil over the tomatoes
• bake for about 40 minutes
• in plenty of water, boil the canellini beans, adding 2 bay leaves and 2 garlic cloves
• peal some very fresh prawns
• cook them very quickly in a little butter and oil, they should just turn opake
• when the tomatoes are ready, mix in the prawns
• drain the beans, add some salt, pepper and olive oil
• then the tomatoes and prawns
• at the last moment add some wild ruggola and serve
