CAOLATO

Caolato or burned cream is such a wonderful and easy dessert.

My friend Monica is staying with me from Zurich and I know she has a sweet tooth,

so I decided to make a ‘caolato’ tonight for dessert.

For 6 people

• 3 organic egg yolks

• 2 tablespoons of caster sugar

• a pinch of salt

• beat the egg yolks and sugar until light and fluffy

• add 350 ml full cream

• mix well

• in a sauce pan pour 70 gr caster sugar

• 1 tablespoon water

• let it cook gently until the color is dark brown

• do not let it burn or it will be bitter

• heat the egg and cream mixture just slightly

• add the burned sugar in a fine, steady stream

• whisk continuously until the sugar has dissolved

• be careful not to let it boil or you will have scrambled eggs

• stirring continuously, let it thicken to a thick cream consistency

• pour the cream into little pots

• let it cool in the fridge

• I like to serve the ‘caolato’ with a dollop of double cream
