I am always trying to find healthy ways to make biscuits for my little treasures.
This is very delicious recipe and it even is gluten free! so double bonuses.
• pre heat the oven 180˚
• 100 gr 70% cocoa dark chocolate ( I like Lindt)
• 100 gr unsalted butter at room temperature
• 110 gr rapadura or brown sugar
• 2 organic eggs, separated
• 120 gr brown rice flour
• 50 gr ground almonds
• 40 gr unsweetened pure organic cocoa powder
• 150 ml water
• a pinch of salt
• 1/2 teaspoon bakin powder
• pour the water in a saucepan and heat the water
• add the chocolate and as soon as it starts to melt, take it off the heat
• stir until smooth
• let it cool
• beat the egg yolks and sugar until light and fluffy
• add the butter then the rest of the ingredients
• pour the chocolate and water mix into the bowl and continue mixing
• in a separat bowl beat the egg whites until stiff
• fold the egg whites through the chocolate mixture
• line a pie dish ( 20 x 30 cm) with greaseproof paper
• pour the mixture into the dish and bake or about 30 minutes
• let it cool for about 10 minutes, before lifting it out and letting it cool totally on a wire rack
• once totally cold, cut into little rectangles
