I tried to make these super crunchy crisp bread, to eat with hummus or baba ganoush, they turned out so delicious, that you can eat them on their own.
By changing the grains you use, you could design your own, favourite crisp bread.
• pre heat oven to 170˚
• 150 gr rye flakes
• 100 gr melted unsalted butter
• 30 gr sesame seeds
• 30 gr poppy seeds
• 100 gr whole spelt flour
• 50 gr whole rye flour
• 1 teaspoon baking powder
• 1 teaspoon salt
• 1 teaspoon honey
• 100 ml boiling water
• mix everything together
• line a 30 cm x 40 cm oven tray
• pour the dough onto the grease proof paper
• whet your hands with cold water and press the dough into the tray
• make it as thin as possible
• for the topping mix
• 1 tablespoon linseeds
• 1 tablespoon sunflower seeds
• 1 tablespoon poppy seeds
• 1 tablespoon rye flakes
• sprinkle evenly over the dough
• bake for about 35-40 minutes
• while still hot, cut into squares
• the crisp bread should be crunchy!
