Winter is really here! The days and especially the nights have become sooo cold.
To me one of the best ways to eat a ‘ Daube’ is in winter surrounded by family and friends.
for 6 people you will need:
• 1 1/2 kg grass fed beef blade, diced
• 750 ml full bodied good red wine
• 5-6 cloves of garlic
• 2-3 fresh bay leaves, sage and rosemary
• 10 shallots, peeled
• in a large bowl mix all the above ingredients
• let them marinade for 6 hours or over night
• take the meat out of the marinade and fry in a little butter and oil until lightly browned
• set aside on a plate
• one bunch of baby carrots, washed
• the heart of the celery, roughly chopped
• 2 large Spanish onions, sliced
• mushrooms, what ever you can find at the market
• 150 gr diced ‘pancetta’
• in a little butter and oil, fry the pancetta
• then add the vegetables, except the mushrooms
• add the marinade and the beef
• turn the heat to low and gently cook for about 30 min
• add the mushrooms and cook for further 20 minutes
• add salt and pepper and taste
• I like to add three big handfuls of baby spinach to the ‘Daube’
• I served it with some mashed potatoes
• it is also delicious served with polenta instead
