FROM SEA TO TABLE

Today Birri and Sophie caught two beautiful salmon in front of our beach house at Tilba

The proud fisherman and fisherwoman

• Birri filleted and skinned the fish

• fried some fresh sage,garlic and chillie

• diced 2 boiled potatoes

• he wizzed the fish in the magimix, leaving it a bit ‘chunky’
• added 4 organic eggs
• fresh parsley, coriander
• 1 small Spanish onion finely chopped
• 8-10 anchovies

• Sophie mixed it well with her hands

• put some polenta on a plate
• made little balls with the fish mixture
• rolled them in the polenta
• fried them in a little butter and oil, until golden

• lemon juice, chillie, garlic, coriander and olive oil

The flavor was so delicious and to be able to catch the fish and prepare it straight away was so exciting.
