I made these deliciously fragrant mushrooms the other day.
It was such a nice way of presenting and eating mushrooms.
• preheat the oven 180˙
• soak a handful of dried porcini mushrooms in water
• 4-5 fresh mushrooms of your choice,cleaned and thickly sliced
• 1 Spanish onion, thinly sliced
• 2-3 cloves of garlic, thinly sliced
• 1 chili, sliced, some of the seeds removed
• fresh sage, Italian parsley and chives, chopped
• in a fry pan, melt a little butter and olive oil
• cook the onion, garlic, chili and sage until they start to color
• take the porcini mushroom out of the water and roughly chop them
• add them and the fresh mushrooms to the onion mix and cook for about 10 minutes
• salt and pepper the mushrooms
• in a bowl, mix them with the chopped parsley and chives
• add 2 tablespoons of crème frâche
• divide the mushroom mixture into 2
• spoon it onto 2 cooking paper sheets
• tie them with some string
• cook in preheated oven for about 20 minutes
• serve the ‘parcels’ as they are and let your guests open hem at the table
