Grape Tart with Cardamon

The other day I made this grape tart and added marzipan and cardamon. It was so delicious, I had to write about it.

make an almond shortcrust pastry:
• 50 gr ground almonds
• 40 gr raw castor sugar
• 150 gr unsalted butter at room temperature
• 200 gr unbleached, plain flour
• 1 organic egg
• seeds of 4 cardamon pods, ground
• pinch of salt
• 2-3 tablespoons of lemon juice
• put all the ingredients in your mixer and mix well
• butter a pie dish and spread the pastry over it
• put it in the fridge for about 1/2 hour
• blind bake it in a preheated oven, 200˚, until golden

in the meantime prepare the marzipan
• 50 gr of icing sugar
• 120 gr ground almonds
• a few drops of rose water, or lemon juice if you prefer
• mix all together, it should be nice and crumbly
• spread the marzipan on the cooled pastry shell

• cut the grapes into halves and arrange them around the tart

make the cardamon cream:
• grind the seeds of 4 cardamon pods
• 2 tablespoons of raw castor sugar
• use real, thick cream, lightly beaten
• mix in the sugar and cardamon
