I love this cold soup, so full of flavour. There are many variations of Gazpacho , I love the addition of lightly roasted almonds.
• 2 green peppers, chopped and seeded
• 3-4 small Lebanese cucumbers, chopped
• 250 gr fresh, baby spinach
• celery heart, green leaves included, chopped
• 2 cloves garlic
• 1 green chilli, some seeds removed, chopped
• big handful fresh parsley
• big handful fresh basilico
• a handful of fresh coriander
• 200 gr almonds slightly toasted
• 2 tablespoons good wine vinegar
• 1 teaspoon sugar
• salt and pepper to taste
• 50 gr Greek yogurt
• put all the ingredients into your food processor and puls
• gradually add about 400 ml cold water
• when you have your desired consistency, refrigerate until needed
• serve in individual bowls adding some ice and a olive oil
• decorate with some freshly chopped herbes
