I am in Tilba and my ‘orto’ is bursting with beautiful vegetables. It is looking so autumnally, the leaves of the Manchurian pears behind the’ orto’ are the most colorful red and gold!
I have collected a basket full of salads, herbs and vegetables, I want to make a super healthy salad. The amounts I have listed below are just a guide line, use what ever you have in your ‘orto’.
• finely chop
• 1 red capsicum
• a bunch of cavolo nero,
• a bunch of purple kale
• a bunch of ruggula
• a bunch of Italian parsley
• fresh basilico, coriander, mint and dill
• 1 red chilli some seeds and filament removed
• make a dressing with
• 1 lemon
• half teaspoon turmeric
• half teaspoon ground cumin
• 1 tablespoon pomegranate molasse
• 1 tablespoon plane greek yogurt
• half a cup of very good olive oil
• salt and pepper
• put all in a jar, shake well
• pour over salad and mix well
• I have chickens that lay amazing eggs
• poach 1 egg per person
• lay the poached egg on the salad
• add salt and pepper
