This morning I found some beautiful swordfish at the fish market, so i decided to prepare this Sicilian delicacy.
for 6 people
• 12 very thin slices of swordfish (use young, small fish)
• salt
for the stuffing:
• 1 Spanish onion, finely sliced
• 1 small red chili, finely sliced
• 1 bunch Italian parsley, chopped
• 2 garlic, crushed
• 12 anchovy fillets
• 3 tablespoons fresh bread crumbs
• 1 tablespoon currants
• 2 tablespoons pine nuts
• olive oil, salt and pepper
• in a frying pan heat 2 tablespoons of olive oil
• gently fry all the above ingredients
• put a tablespoon of stuffing on each slice of swordfish
• roll it up very tightly and secure with a toothpick
• arrange the little parcels in a buttered ovenproof dish
• laying them side by side
• using fresh bay leaves, tuck them here and there between the swordfish’ involtini’
• drizzle a little olive oil
• some salt and pepper over the fish
• bake in a preheated oven, 200 degrees, for about 15 minutes.
• just before serving, squeeze some fresh lemon juice over the fish
