A ku ku is an egg dish very much like a frittata but lighter. This is a great dish to serve as part of an antipasto, to take on a picnic or just as a little snack.
• preheat oven to 180˚
• one big bunch of Italian parsley, finely chopped
• one bunch coriander also chopped
• one large bunch baslico, chopped
• one bunch chives, chopped
• one bunch mint, chopped
• one bunch dill, chopped
• a small bunch of spring onions, sliced
• 10 organic eggs
• 100 gr walnuts, toasted and chopped
• 2 tablespoons barberries
• 3 tablespoons plain Greek yogurt
• 3 teaspoons baking powder
• 2 tablespoons plain, unbleached flour
• 2 teaspoon ground turmeric
• in a large frypan melt a little butter and olive oil
• gently fry the spring onions and turmeric
• now add all the herbs and cook for a few minutes
• let them cool
• in a large bowl mix the eggs with the rest of the ingredients
• make sure all is really well mixed together
• now mix in the herbs, salt and pepper
• line an oven proof dish with baking paper
• pour in the Ku ku mix and bake for about 35 minutes
• let it cool, then cut it into squares
• with this recipe, you will have enough for 10 people as a side dish
