These Madeleines are really quickly prepared and every body loves them!
• pre heat oven 200 ˚
• 2 organic eggs
• 80 gr caster sugar
• 125 gr unsalted butter, melted
• 125 gr sifted flour
• 1 teaspoon baking powder
• a pinch of salt
• grated skin of 1 organic lemon
• grease the Madeleine shells very well
• beat the eggs and sugar until light yellow and thick ( 15 min)
• fold in the butter and flour alternating
• add the lemon peel and salt
• fill the buttered shapes to 3/4 full
• bake in oven for about 8 minutes, or until golden
• gently lift the Madeleines out of their shells and let them cool on a wire rack
• dust with a little icing sugar
• you will get 12 big and 20 mini Madeleines
