Making Bread

Today the weather is grey and cool, so perfect for bread making. Samson and Griffin are visiting and giving me a hand or four in preparing it.

we used:
• 350 gr whole organic spelt flour
• 150 gr organic rye flour
• 2 1/2 tablespoons of dry yeast
• 2 tablespoon honey
• 1 tablespoon salt
• approximately 2 to 2 1/2 cups of warm water

• mix everything together well and start kneading

• if the mixture seems too dry, add a little more water
• if too wet, a little more flour
• kneed until the dough becomes shiny and elastic

• roll the dough into a ball
• place it in a bowl

• cover with a damp clean tea towel
• let the dough rest in a warm place for about one hour

• shape the bread dough into two loaves
• or you can make one big one or lots of small bread rolls, up to you
• bake in a hot, preheated oven, 220˚ for about 20 minutes
• you know when the bread is cooked, if by tapping the bottom of the bread it sounds hollow

This bread freezes very well.
