This recipe is from my friend Margie Agostini. It is still one of my very favourite cakes. So moist and full of flavour. It is also super easy to make.
I have halved her original recipe and added grated orange rind to the dough.
• preheat oven 180 ˚
• 250 gr unsalted butter at room temperature
• 250 gr raw caster sugar
• 4 organic eggs
• 250 gr self raising flour
• grated skin of 1 organic orange
• 100 ml freshly squeezed orange juice
• pinch of salt
• in your electric mixer, beat the sugar and butter until light and fluffy
• add one egg at the time, beating well after each egg
• now add all the flour , orange rind and salt
• slowly pour in the orange juice and mix well
• butter a 25 cm cake tin
• pour in the cake mixture
• bake for about 45 minutes
• icing:
• 200 gr icing sugar
• 30-40 ml of fresh orange juice
• in a fry pan toast 50 gr coconut until golden ( optional)
• once the cake is cold, ice it and while the icing is still whet
• sprinkle the coconut ( if chosen) over the cake
