Minestrone Verde

I am back in Zuerich and the temperature has plummeted to 10˚ Celsius!!! It is raining, the fog is hanging over the mountains. The people are walking along the streets with their coat collars turned up, the hands deep in their pockets and the eyes turned to the floor!!!

I went to the market at Bürkliplatz and bought beautiful, young vegetables to make a green Minestrone. The weather required it!!!
• leaks
• celery
• carrots
• baby beans
• cauliflower
• cabbage
• zucchini
• parsley, cut them in small pieces
• and cooked them in fresh chicken broth

• to serve the Minestrone, I used a big hand full of
• fresh baby spinach leaves, that I placed on top of the soup in every individual soup bowls

Every body added Parmigiano, virgin olive oil and pepper, to their liking. It looked so fresh and tasted really fantastic!
