I want to make a super light orange cake ( I know that her two boys will love it too)
• turn oven to 170˚
• butter a 22 cm spring form
• 300 gr unsalted butter at room temperature
• 280 gr caser sugar
• 6 organic eggs
• 300 gr self raising flour
• 150 ml freshly pressed orange juice
• grated skin of 2 organic oranges
• a pinch of salt
• with your mixer beat the butter and sugar together until light and fluffy
• add the salt
• keep whisking and add one whole egg after the other
• now add 1/3 of the flour and orange pith
• continue whisking
• then 1/3 of the orange juice
• continue alternating flour and orange juice until it is used up
• pour the cake mix into the buttered spring form
• bake in preheated oven for 60 minutes
• for the icing
•200 gr icing sugar
• 40 ml freshly squeezed orange juice
