My friend Maria gave me this recipe. I call her the ‘Cake Queen’, as she makes the most amazing cakes! I made this one yesterday for Father’s Day and it was eaten with great enthusiasm.
preheat the oven 180˚
• 250 gr unsalted butter at room temperature
• 250 gr raw caster sugar
• 4 organic eggs
• 3 cups self raising flour
• a pinch of salt
• finely grated rind of 1 large, organic orange
• juice of that orange (3/4 cup)
• beat the sugar and butter until light and fluffy
• add one egg at the time, continue beating
• now fold in 1/3 of the flour, followed by
• 1/3 of the orange juice, the orange zest and salt
• continue until all is used up
• butter an 24 cm spring form
• pour the cake batter into it
• bake in a preheated oven for about 45 minutes
• let the cake cool on a cooling rack
for the icing:
• put about 200 gr pure icing sugar in a bowl
• add a few teaspoons of orange juice at the time
• mix very thoroughly, so as not to have any lumps
• the consistency should be that of a thick cream
• cover the cake with the icing
• in a fry pan toast about 2 cups of shredded coconut
• press the toasted coconut into the still soft icing
