Peas are my big passion at the moment. So i am trying different combinations. This Persian inspired dish is on top of my list.
• 700 gr young potatoes boiled until just tender and cut into cubes
• 400 gr fresh, shelled peas, boiled in salted water until just tender
• 2 teaspoons mustard seeds
• 2 teaspoons ground turmeric
• 2 teaspoons ground cumin
• 2 teaspoons sumac
• 1/2 – 1 teaspoon chilli flakes
• 3-4 cloves of garlic, crushed
• 1 cipollini onion, finely chopped ( or a smal Spanish onion)
• salt and pepper to taste
• one bunch Italian parsley and some chives chopped
• juice of 1/2 lemon
• in a little oil, fry the mustard seeds until they pop
• add the rest of the spiced , the onion and garlic and cook a little more
• add the potatoes and cook, stirring them around
• now add the cooked peas
• mix everything together, gently let them fry for a few more minutes
• season with salt and pepper and add the lemon juice
• as a last ingredient the chopped herbs
