POMEGRANATE GRANITA ( bastani-e anar)

When I was growing up in Teheran in the 1950s, my mother would insist that we all drink a glass of freshly squeezed pomegranate juice every morning. It was her special potion to keep us happy and healthy! (Modern science suggest she might have been on to something.)
It is pomegranate season right now. I like the strong flavour and the tartness of these fruits. The granita itself looks amazing. The colour is so scarlet  and dramatic and we  all need a bit of colour and drama in our  lives.

• serves 6 people

• juice of about 6 pomegranate ( 600 ml)
• 2 tablespoons of caster sugar
• 100 ml water
• juice of 1 lemon
• dissolve the sugar in the water by boiling it for a few minutes
• let it cool down
• add the syrup to the pomegranate – and lemon juice
• pour into a shallow dish and put in freezer

• with two forks, scarp the mixture every few hours
• once you get the desired consistency ( minimum 4 hours freezing)
• serve , you can of course use your ice cream machine if you have one
