Potato salad is one of those simple but great dishes, that everybody loves.
This here is my version:
• boil some waxy potatoes until just done
• drain and immerge them into cold water to stop the cooking
• peel and dice the potatoes
• while they are stil warm
• make some strong vegetable or chicken broth and pour about half a cup over them
• shake the potatoes gently, they will absorb some of the broth
• I like to use spring onions, chopped very finely, you can also use shallots or Spanish onions
• some gherkins, sliced
• about 1/4 cup good red wine vinegar
• 1/2 a cup of virgin olive oil
• salt and pepper
• mix all gently together and taste for seasoning
• you can add a sprinkling of cumin seeds
