This is a fabulous summer salad, full of flavour and texture.
This salad is a meal in itself, although you can serve it as an accompaniment with grilled chicken or other vegetable dishes.
• for 4 people as a main dish or 6-8 as a side dish
• 300 gr Puy lentils, soaked in water for about 1 hour, then cooked until just tender
• 400 gr very ripe baby tomatoes cut in half
• a bunch of coriander, stalks included, chopped
• a small bunch of mint, chopped
• a small bunch of Italian parsley, chopped
• 3-4 little spring onions, finely sliced
• 1 chilli, some of the seeds removed, finely chopped
• for the dressing:
• juice of 2 lemons
• 1 teaspoon sumac
• 1 teaspoon ground turmeric
• 1 teaspoon ground cumin
• salt and pepper
• 1 cup very good olive oil
• put the dressing ingredients into a glass jar with lid and shake well
• once the lentils are cold
• mix in the dressing, coating the lentils well
• then add the tomatoes, onions and herbes
• mix and taste for seasoning
