Cabbage is one of the very healthy vegetables and full of fibre !
I make this salad quite often, as it is so quick to prepare and tastes delicious!
• slice a small savoy cabbage very thinly
• 1 chilli half seeded and sliced
• a bunch of Italian parsley, chopped
• half a cup lightly toasted walnuts, chopped
• a few anchovies, finely chopped
• salt and pepper
• mix every thing together
• for the dressing:
• juice of a large lemon
• 150 ml very good olive oil
• 1 tablespoon mustard
• salt and pepper
• put the dressing ingredients into a jar and shake well
• dress the salad
• taste for salt
• this salad keeps for a day ore two, unlike leaf salads, that wilts once dressed
