My husband Michele has just got back from an amazing health retreat, Aro Ha in New Zealand. They did a lot of hiking in the mountains, Yoga and ate super healthy food. I must say he looks really good!
I am trying to prolong his experience, so I made this salad for lunch. Because it has buckwheat, pecans and the kales are raw, you have to chew really well. You feel very full at the end of the meal, although you have only eaten a salad. I can highly recommend this !
• a small bunch of red kale
• a small bunch of cavolo nero
• 4-5 carrots
• 1 small fennel
• half a bunch of Italian parsley
• a small bunch of ruggola
• 2 big handful of pecans, toasted
• half a cup of activated buckwheat
• 1 chilly, half de seeded and chopped
• remove the tough, center stem of the cavolo nero and the kale
• chop very finely
• cut the carrots and fennel in smallish pieces
• the ruggola and parsley i left quite whole
• may be get rid of the snail! It just shows how fresh the vegetables are!
• add the buckwheat, chilli and nuts
• I made the dressing with 1 large tablespoon of Dijon mustard
• 1 teaspoon ground turmeric
• 1 teaspoon ground cumin
• 1/4 teaspoon asafoetida
• juice of 1 large lemon
• 1/2 cup of very good olive oil
• salt and pepper
• put everything in a jar with lid and shake well
• dress the salad and mix well
• e voilà a super healthy salad!!!
