The rhubarb is really at its peak now! At the market I could not resist it, so I bought it and made this delicious crumble.
• preheat the oven 180˚
• wash the rhubarb stems
• cut them into about 2 cm long pieces
• butter an oven proof dish
• arrange the rhubarb in the dish
• in your mixer put
• 250 gr almonds
• 150 gr rapadura sugar or brown sugar
• 130 gr unsalted butter
• 2 teaspoons of ground cinnamon
• half a teaspoon of ground cardamon
• a pinch of salt
• puls until you get a crumbly mass
sprinkle this mass over the rhubarb
• add the grated rind of one lemon
• 50 gr of almond slithers
bake in the oven for about 25 minutes
• or until it looks golden brown
• serve with whipped cream or natural yogurt
