I urge you to try this salad, it is so fragrant, fresh and incredibly good for you.
There is a little bit of preparation, as you have to to pick through the different herbs, but so worth the effort.
• I was inspired this morning, as I walked through my ‘orto’
• all my herbs looking so healthy and crying out to be picked!
• pick a big bunch of ruggola
• fresh tarragon, coriander, chives, Italian parsley, mint, oregano, dill
• pick off only the leaves, discarding the tough stems
• soak them in cold water
• spin them dry and leave them in fridge until needed ( they will crisp up)
• in about 50 gr unsalted butter
• gently fry 2 handfuls of almonds (carful not to burn them)
• chop he almonds and pour the butter into little jar
• squeeze the juice of one lemon into the jar with the butter
• salt and pepper
• 1 tablespoon pomegranate molasses
• a little good olive oil
• shake the jar well
• taste and add more oil if needed
• just before serving the salad, pour over the dressing
• add the almonds
• a little sprinkling of sumac
• mix all gently as not to crush the herbes
• et voilá, a fabulous salad that will make your taste buds sing!
