This is a very fragrant, light and crunchy salad from the South of Iran.
I love its freshness and it compliments well to rice and khoreshes ( stews) dishes.
• 3-4 small Lebanese cucumbers
• 3-4 medium tomatoes or 10 cherry tomatoes
• 5 medium radishes
• 1/2 Spanish onion
• 2 green chillies, seeds and pith removed
• a bunch of fresh coriander
• some fresh mint leaves
• peel some of the cucumber skin
• half the cucumbers and remove the seeds
• half again and dice
• cut the rest of the vegetables in similar sized cubes
• finely chop the herbes
• mix everything in a large bowl
• to make the dressing
• juice of 1 lemon
• about 1/2 cup very good virgin olive oil
• 2 tablespoons of pomegranate molasses
• 1 tablespoon plain yogurt
• salt and back pepper
• put all the ingredients into a jar and shake very well
• taste and adjust seasoning
• por over salad and mix gently through
• as last thing, sprinkle a heaped teaspoon of sumac on top of the salad and serve
