SAMSON AND GRIFFIN MAKING PASTA

Samson and Griffin are such good little chefs! We made pasta the other day and had a lot of fun doing it. We used normal plain flour, if you want to make the pasta super healthy, use organic spelt flour instead.

• for 4 people:
• 4 organic eggs
• 400 gr unbleached, plain flour plus 50 gr extra for dusting
• 1 teaspoon salt
• in your mixer, mix all the ingredients until well amalgamated
• divide the dough into 4 smaller balls
• set your pasta machine on the widest setting ( 1)
• flatten the first ball and push it through the machine

• fold the pasta sheet in 3 and push it through again
• do this 3 times, then start making the pasta sheet thinner
• decrease setting on machine until you get to setting 7
• sprinkle some flour on the table and lay the pasta sheet on the floured surface
• repeat this process with the remaining 3 pasta balls

• now start cutting the pasta with the cutting section

• arrange the cut pasta on a tray and sprinkle some flour over it, so that the pasta does not stick

• boil plenty of salted water
• the fresh pasta will only take about 3 minutes of cooking
• make your favourite sauce
