My friends Maggie and Wayne came to stay the other day. They had never tried squid ink pasta.
One of my favorit pastas! Well off we went to the fish market, to get the ingredients.
• 5-6 baby squid
• 12 fresh green prawns
• clean the squid and keep the little ink sacks
• shell and de vein the prawns
• 1 packet of squid ink spaghetti
• on the stove,put a large pan with water and salt and bring to the boil
• chop 2-3 garlic cloves
• 1 chili, some seeds removed and finely chopped
• 1 small bunch of Italian parsley, finely chopped
• in a fry pan melt some butter and olive oil
• add the garlic, chili and parsley and gently cook
• now the squid and ink sacks
• gently let it fry for a few minutes
• add a small glass of dry white wine and let it reduce to half
• from a tin of pelati use only the tomatoes and add them to the pan
• cook for another 10 minutes
• add the prawns
• gently cook for about 10- 15 minutes
• taste for salt and pepper
• to the boiling water add the pasta
• cook to instructions on packet
• drain the pasta and add it to the pan with the tomato sea food sauce
• gently mix every thing together
• as a finishing touch, add some fresh salmon eggs
