‘SPEKULATIUS’ CHRISTMAS BISCUITS

My sister Rosanna inspired me this morning, when she posted a photograph of her Christmas biscuits. She is such an artist and makes them look so beautiful.
So here are mine, a little less artistic, but they taste really good and for me,there is no Christmas without the Spekulatius.
• 125 gr unsalted butter at room temperature
• 250 gr unbleached, plane flour
• 60 gr almond meal
• 1 organic egg
• 120 gr rapadura sugar
• 1 teaspoon baking powder
• zest of 1 organic lemon
• 1 teaspoon cinnamon
• 1/2 teaspoon ground cardamon
• 1/2 teaspoon ground cloves
• one pinch of salt

• preheat the oven 180˚
• put all the ingredients into the food processor
• mix until just amalgamated
• roll out to about 1/2 cm thickness
• put the pastry on a tray
• leave it in the freezer for about 5 minutes

• cut out your favorite shapes
• occasionally dip the shape int flour so it does not stick
• bake in the oven for about 8-10 minutes
• just keep an eye on them

• let the Spekulatius cool down on a rack
• you can decorate them as you wish
• store in a biscuit tin
