This cake is so moist and an explosion of orange flavour! It is also perfect for people who are gluten – and lacto intolerant. This orange cake is so easy to make, I am sure it will become part of your repertoire.
• 2 organic oranges
• 200 gr rapadura sugar
• 300 gr almond meal
• 6 organic eggs
• 1 teaspoon baking powder
• a pinch of salt
• freshly ground cardamon
• boil the oranges for 1 hour
• pre heat oven to 160˚
• with your kitchen wizz, purée the oranges
• put the sugar, baking powder, ground cardamon and salt in a bowl
• add the eggs
• beat everything together until it is light and fluffy
• mix the almond meal through
• now add the orange purée and mix it very well
• oil a 23 cm springform
• pour the cake mixture into the tin
• bake in pre heated oven for 55 minutes
• the cake should be golden
• I find the orange cake tastes even better wh en put in the fridge, the flavour intensifies
