This salad is a little bit different and it was a great success with my family!
Of course you can make many variations from this basic recipe.
I made it with red cabbage and kale, two of the healthiest vegetables. They are full of fiber, vitamins, minerals and antioxidants
• for 4 people
• very thinly slice a quarter piece of an organic red cabbage
• 4-6 organic kale leaves, remove the hard stem all the way up and slice them thinly
• 4 young organic carrots, roughly chopped
• 1 chilli some of the seeds and filaments removed and thinly sliced
• half a cup of pistacchio, lightly toasted
• 1 cup activated buckwheat
• make the dressing
• juice of one large lemon
• a large tablespoon French mustard
• one cup of very good virgin olive oil
• 1 teaspoon ground cumin
• salt and pepper
• put all the ingredients into a jar with lid and shake well
• pour over salad, mix and taste for seasoning
