This is such a quick and easy way to make a pie, admittedly there is a bit of cheating going on… but I think from time to time that is OK!
• buy a very good quality sweet short crust pastry (this is the cheating part)
• 3 granny smith apples
• 50 gr ground almonds
• 1 teaspoon cinnamon
• 50 gr raw caster sugar
• juice and pith of 1/2 organic lemon
• 50 gr unsalted butter
• preheat the oven to 200˚
• butter a 25 cm pie dish
• spread out the pastry making a wavy border
• mix the almonds with half the sugar and half the cinnamon
• sprinkle on base
• slice the apples
• mix them with the lemon juice and pith
• arrange them on the pie bottom
• sprinkle the remaining sugar and cinnamon over the apples
• cut the butter into pieces
• arrange on top of apples
• bake in oven for about 25 minutes or until golden brown
You can use other fruit, pears, apricots, peaches instead of the apples.
