THE MILK TREE

While we were up in the Engadine, Switzerland,

hiking through breathtaking beautiful valleys

and mountains,

we came across this pretty little mountain dairy.

Inside the dairy, I came across this unusual chart of a ‘ Milk Tree’.
The chart shows the chemical composition of milk, gives you about 90 individual components and about 70 dairy products that can be used using milk.
I found it so fascinating, I had to share it with you!!
The mountain dairies in the summer produce absolutely wonderful milk, especially when the cows are in the high pastures eating alpine meadows. Anything they make with it tastes incredible.
