TIGER BISCUIT (gluten free)

These are such good, healthy, easy to make biscuits and the children LOVE them!
They named them ‘tiger biscuits’ because you have to give a roar when you eat them, a great sign of approval.

• pre heat oven to 180˚
• 120 gr almonds, lightly toasted
• 130 gr activated buckwheat
• 100 gr rapadura
• 130 gr unsalted butter at room temperature
• 1 organic egg
• a pinch of salt
• half a teaspoon ground cinnamon

• put all the dry ingredients into your food processor
• wizz until it has a consistency of bread crumbs
• add the egg and butter and wizz until it is just amalgamated

• line an oven tray with grease proof paper
• roll little balls with the dough and lightly press them down
• the biscuits will spread, so make sure you leave enough gaps between them
• bake for about 10 minutes
• let them cool down a little, before  you put them on a biscuit rack to cool compleatly

• when completely cold, put them in a airtight container
