Whole Grain Bread

Today I made this delicious ‘Brot’. I used different grains than my usual ‘Walser Brot’, and I think it works very well. Use all organic products, it is so worth your while!

• 500g whole spelt flour
• 500g rye flour
• 100g spelt flakes
• 100g rye flakes
• 100g buckwheat, toasted
• 100g quinoa
• 1 table spoon of sea salt
• 2 tablespoons Manuka honey or any honey you like
• 2 tablespoons of granulated yeast
• approximately 3 cups of warm water

• put all dry ingredients into a large bowl
• take 1 cup of the warm water and mix in the honey until it is de-solved
• then add the yeast and a table spoon of the flour
• mix well and let it stand a few minutes
• you will see the yeast will activate and it will bubble

• now add it to the flour mixture
• add the rest of the warm water
• mix with a large spoon

• if the mixture seems too whet, add a little more Spelt flour
• if too dry a little more water
• tip the flour mixture on to your kitchen bench and begin to kneed
• kneed until the dough becomes smooth and shiny
• if you press your finger in the dough, it should spring back
• shape the dough into a neat ball
• put the ball in a bowl and cover it with a damp cloth
• let it stand in a warm place for at least 1 hour
• punch down the dough, kneed a little more
• shape it into 2 large loafs
• you can of course also make little bread rolls, round shapes, 4 smaller loaves, it is up to you

• cover the loaves again with the damp cloth
• heat the oven to 200°

• when the oven is hot bake the bread for about 20 – 25 minutes
• to test if the bread is done, tap the underside of the loaf, it should sound hollow
• let the bread cool on a rack

This bread stays fresh for up to 5 days!!
