Sometimes you might feel like making an apple tart but need to make it quick. This recipe is super quick.
At the moment apples are at their very best, full of flavour and crunch.
I like to use Granny Smith apples for this tart, but you can use any ones you like.
There is little bit of cheating involved in this recipe.... but I think from time to time that's allowed.
- Ingredients
- use very good quality shortcrust pastry ( this is the cheating part)
- 3 Granny Smith apples cut into 1cm slices
- 50 gr ground almonds
- 50 gr raw sugar
- 50 gr unsalted butter
- juice and pith of 1/2 an organic lemon
- 1 teaspoon ground cinnamon
pre heat the oven to 200 ˚
line a buttered 23 cm spring form with the pastry
in a bowl mix the sliced apples with the lemon juice and pith
in a seperate bowl mix the sugar, ground almonds and cinnamon
spread half the sugar almond mix unto the pastry base
arrange the apples in a circular pattern and add the remaining sugar and almond mix and lastly the butter in little pieces on top
bake in pre heated oven for about 20 minutes or until golden
you can use apricots, figs or peaches instead of the apples
